Pasta is really a weakness of mine. Spaghetti, chicken alfredo, mac n cheese, pasta salads, yes please and keep it coming.
When making pasta recipes at home, I like to use whole wheat pasta. I think it is delish. It isn’t much different than regular pasta, but has a richer flavor. Admittedly, Tim is not crazy about it, but he still eats it no complaints.
The recipe I am sharing today is a lightened up chicken parmesan made with whole wheat noodles, sauteed chicken rather than fried, and spinach for a delicious veggie boost.
Healthy and Fresh Chicken Parmesan with Spinach
- Two large chicken breasts
- Tablespoon of olive oil
- Minced garlic (you could use fresh)
- Chicken broth for de-glazing
- Two jars of Classico tomato sauce
- Baby spinach leaves
- 1.5 cups whole wheat penne noodles
- Shredded parmesan cheese
Chop the chicken breast into bite sized chunks.
Sautee the chicken and garlic in your pan with the olive oil until cooked through. Use the chicken broth to deglaze the pan as needed.
Boil the noodles according to package directions.
Add the tomato sauce to the chicken and bring to a boil. Put three big handfuls of spinach in the sauce. Turn the heat down once it’s nice and wilted.
Add prepared noodles to the sauce. You can keep the noodles separate from the sauce or put it all in one pan. We like to put it all together. I always have the second jar of tomato sauce on hand in case the mixture isn’t saucy enough. Today I added about half a jar of extra sauce. Tim likes it saucy.
Add a layer of parmesan cheese on top and stir it in.
Serve your chicken and spinach parm with some extra cheese on top! This meal is so yummy. I hope you love it!
