Happiest of Mondays to ya! šŸ™‚ Can’t wait to share this week’s recipe with you! Here’s the rundown for the week.

If you’re one of those people who doesn’t like their food on their plate to touch, this recipe is not for you. I on the other hand like to mix it up. Especially when mashed potatoes are involved.
I was working at KFC when they debuted the mashed potato bowl. People kinda lost their minds for awhile. Or they were totally grossed out because their chicken was touching their potatoes which were touching their corn…
For aĀ  limted time you could get white country gravy on your potato bowl. And let me tell you that was delicious – and it’s the inspiration for this week’s #mealplanmonday recipe.

Warning: every part of this recipe is processed. Someday I would love to take a more whole food approach to this meal. But today I’m using instant potatoes, frozen popcorn chicken, a package of instant gravy, and canned corn.

Country Style Mashed Potato Bowl


Mashed potatoes
Whole kernel corn
Bite sized chicken pieces
Gravy; Your preference, but we are using peppered white country gravy
Shredded cheese, cheddar, colby jack, or similar blend

mmm, convenience.


  1. Prepare all the ingredients
  2. Layer mashed potatoes, corn, and chicken in a bowl.
  3. Top with as much gravy as you’d like.
  4. Sprinkle cheese on top.


The amount of each ingredient you put in your bowl is up to you. I know for Tim he likes less corn and more potatoes. This is a good way to sneak some meat into your kids’ diets.

This was such a delicious and filling meal for us today. Plus there’s leftovers for Tim to take to work.

Oh, did you make any of the soups this weekend? I made broccoli cheese and the beer bread! Everyone loved both! And why wouldn’t they? It was the most delicious combination I think I’ve ever had.
