Is it just me or was that a super fast weekend? Monday already 😦 … but at least my meal planning and grocery shopping is done for the week. One less thing to worry about. We have Ivy’s third birthday party this coming Sunday, so this will be a busy week!

- Ranch chicken taco salad
- Chicken, rice and veggies
- Chicken strips, mashed potatoes, corn and biscuits
- Pot roast
Today I would like to share with you another fast and easy meal made with Tyson Grilled and Ready diced chicken breast. Last time we made 10 Minute Quesadillas, and now we are making ranch taco salad, also in ten minutes.
I was originally inspired by Jania and Mary at recipemothers.com. Their recipe uses a crockpot to cook raw chicken breast and then you eat the mixture on hard shells. We have made it in the crockpot, and it was great, but the Grilled and Ready chicken is great in a pinch. I like to do it in a taco salad since it already has ranch, and ranch is for salads.

Now, let’s get to the recipe.
The beginning of the process is the same as the 10 minute quesadillas…
I defrost the chicken, chop it up in my skillet, add the taco seasoning and water, and bring it to a quick boil.
Once the chicken is seasoned, I’m adding a generous squirt of ranch dressing. The amount of ranch you add depends on how ranchy you want it. (Autocorrect was pretty sure I meant raunchy, lol.) I like to add enough that the mixture is nice and creamy.
Lastly, I put shredded lettuce in our bowls, add the chicken ranch mixture, and top it with shredded cheese and salsa.
Ivy likes this meal a lot — as long as I let her put the cheese on it ALL BY HERSELF.
You could also add spanish/mexican rice to the bowl! Most times I make this I serve tortilla chips with it. Crush them up and add them on top! It makes the meal go further and adds a yummy crunch 🙂
