Welcome to the first edition of Meal Plan Monday, a weekly series in which I will post the menu for the week at the Smith House, displayed of course on my adorable and functional chalkboard menu! Along with a quick and easy recipe or tip.
This week we have
- Chicken alfredo
- Chicken strips
- Turkey burgers
- Chicken salad sandwiches
How about you? Making anything new this week? I am not. We are keeping it pretty basic. Waffles from bisquick, frozen chicken strips, frozen turkey burgers… at least I mix up a yummy sauce for the burgers!
I take a 100 calorie spicy guacamole cup and add ranch dressing; just enough to make it light green and creamy. It is delicious. Really amps up the burgers. I’ve been meaning to take a stab at making it fresh. Maybe another week.
Some weeks I make bacon or buy deli-sliced cheese to go on top, but my budget decided against it. Instead we can keep it fresh with some shredded lettuce.
We’ll be pairing those burgers with pasta salad, one of those suddenly salad mixes. Who has a fresh and quick macaroni salad recipe for me?
